Production planning and meal counts

The production plan comes from the approved menu and the day's order. The requisition reserves and issues ingredients from stock. Meal counts keep four quantities for each service: forecast, operation, Client and billing.

Demo steps
  1. Recipe sheet. The recipe sheet adds up the ingredient costs and shows the cost of each portion.
  2. Menu. The weekly menu uses the sheets and shows the expected cost of each day.
  3. Production. In production, MEPO reserves the ingredients and deducts them from the Unit's stock.
  4. Result. The contract result shows revenue, COGS, expenses and margin. Each value shows where it came from.

What MEPO calculates and records.

  • Production plan with the sheet for each component
  • Requisition with stock reservation and issue
  • Waste and leftovers with a recorded destination
  • Meal counts with four reconciled quantities
  1. Production plan

The plan uses the production target from the daily order and, with no order, the menu's planned portions. It freezes the version of each sheet and adds up the ingredients of all preparations, keeping the detail of each sheet. A component without a sheet becomes a pending item, with no quantity.

  2. Ingredient requisition

The requisition reserves the ingredients and lowers the available balance. When the storekeeper confirms picking, the reservation becomes a stock issue, at the balance's average cost.

  3. Waste and leftovers

Waste is a stock issue. Leftovers have a declared destination: disposal leaves stock, and a controlled return comes back as an entry and lowers that day's COGS. The sanitary decision stays with the operation.

  4. Four quantities per service

Meal counts keep the forecast, the operation, the Client and billing in separate fields, and none overwrites another. The billing quantity only comes from a reconciliation with a stated source and reason.

Frequently asked questions

Does the system decide which quantity is correct?

No. MEPO shows the four quantities, calculates the differences and records the reconciliation made by a person, with its source and reason.

Can I import meal counts from a spreadsheet?

Yes. MEPO reads CSV or XLSX and shows a preview before saving. The import only updates meal counts the contract already generated, and only when a row matches one of them without ambiguity. The rest go to a review report.
