Recipe sheets and menus for collective catering

The recipe sheet lists ingredients, yield and cost per portion. The menu builds each service from components linked to the sheets, and goes through review and approval before it generates the production plan.

Demo steps
  1. Recipe sheet. The recipe sheet adds up the ingredient costs and shows the cost of each portion.
  2. Menu. The weekly menu uses the sheets and shows the expected cost of each day.
  3. Production. In production, MEPO reserves the ingredients and deducts them from the Unit's stock.
  4. Result. The contract result shows revenue, COGS, expenses and margin. Each value shows where it came from.

What MEPO calculates and records.

  • Sheet with ingredients, yield and preparation method
  • Theoretical cost per portion
  • Menu by day and service, with repeating week cycles
  • Review with comments and a recorded decision
  1. Recipe sheet

The sheet holds ingredients, units, yield, number of portions and preparation method, and calculates the theoretical cost per portion from ingredient prices. Each change creates a version with a validity period and does not alter old menus.

  2. Menu by service

Each day has services, such as lunch and dinner. Each service has sections and components, and each component points to a sheet. A free-text component stays as a pending item and is left out of the theoretical cost. Templates repeat a cycle of weeks.

  3. Review and approval

Each menu version has a technical owner, a reviewer and a due date. The reviewer can be someone outside the company, who opens a link sent by email, comments and decides to approve, request changes or reject. The decision is tied to that version.

  4. Version history

An approved version is not edited. The next change creates a successor version, and the previous one is kept with its comments and decision.

Frequently asked questions

Can a sheet be adapted for one Unit?

Yes. The Unit gets its own version of the sheet, with its own composition and yield. The Organization's sheet and the other Units do not change.

Is the menu approval an electronic signature?

No. MEPO records who reviewed and decided on each version, but that record is not an electronic signature.
